First of all, please please tell me you've seen this video. I saw it for the first time last week and the song's been on replay in my head ever since. I'm 100% cool with it.

Secondly, it's St. Patrick's Day weekend! I'm not a big day drinker, I'm about to trek off on my road bike for a 2-hour ride, actually. The weather is beautiful, and I should probably burn off those three helpings of (soy) cheesy potatoes I had for dinner last night...

Anyways, I'm Irish. I love this holiday, and I need to celebrate somehow, right?

Earlier, I was debating where to take my bike ride. I had been planning to take a ride to (dare I say) McDonalds to get a Shamrock Shake! But, as I explained earlier this week, dairy and sugar aren't exactly my BFF's right now. I looked up the ingredients: the first was milk, then sugar, then corn syrup. Yeah, not happening. Today anyways...

Soo, after a bit of experimentation, I whipped up my own, healthy, dairy-free Shamrock Shake! It was not nearly as good as the real thing (ha! being honest here) but hey, it relieved my craving, gave me energy, and left me guilt free. Here goes - a healthified Shamrock Shake.

1 cup unsweetened Almond Breeze milk

1 frozen banana

1 avocado

Handful of fresh mint

1 teaspoon vanilla

Cinammon to taste

Tablespoon of golden ground flax seed

Tablespoon (or 2, 3, 4...) of honey

Handful of spinach if you're feelin' healthy

Crushed ice

I threw in some green grapes and half an orange, too. ☺

If you must, splash in some Irish whiskey.
